Makgeolli from Korea ...

Makgeolli, also known as takju, is the oldest traditional alcoholic beverage in Korean history. Referred to as ‘Korean rice wine’ in English, it is made with glutinous rice, nonglutinous rice, barley and flour. The ingredients are first steamed and dried. This is mixed with yeast and water and left to ferment naturally at a certain temperature. When it has fully fermented, the resulting clear strained rice wine is filtered and squeezed. If a rice-wine strainer is used to strain out the wine, the alcohol made is called clear strained rice wine. If the wine is roughly strained using a steaming rack, ‘makgeolli’ is produced.

Makgeolli is about 6-7% of alcohol by volume. A combination of rice, flour and barley gives it a milky off-white color, and sweetness.

Historically, Makgeolli was the most popular alcoholic drink among common people and was brewed individually at home. In later years, with the increasing popularity of Beer, Makgeolli began to loose its importance in Korea. However, in recent times it has made a comeback with more commercial brewers selling this wine.


Makgeolli is usually drunk in a metal bowl and is best served with fruits or “pajeon” (Korean pancake).

Khansama, ‘The Royal Indian Master Chef’, is a new restaurant opened in UB City, Bangalore. The concept for this fine dining restaurant originates in the tradition of Khansamas or chefs working in stately palace kitchens, generating rare and flavorsome recipes to satisfy the Kings' gastronomic fancies. Religiously maintaining a record of every exotic ingredient, technique of preservation and even the art of presenting food, the Khansamas kept their recipes a closely guarded secret.

To serve a meal befitting the ‘royals’ the ambience needs to be just as ostentatious. Khansama is just that! Large and opulent, the interiors successfully recreate the charm of a royal fort. Antique lamp shades create soft lighting and the low-seating is reminiscent of the ‘Dastarkhwan’- the princely practice of feasting by laying the meal before the guest.

Khansama offers a rich menu of Indian Kebabs and Curries, apparently sourced from the royal chronicles. All the food is based on age-old recipes from various royal kitchens like the Rajputana, Awadhi, Mughal and Travancore. Specialties are kebabs and seafood. The Salmon ki Seekh- delicately skewered kebabs of Norwegian Salmon cooked to a smoky finish in a clay oven or the tawa masala hallibut – masala grilled Iceland halibut fillets and simply out of this world! Some of the other delicacies include Termezi Qorma, mildly spiced lamb and Masaledar Murg ki Chops. The restaurant also serves a daily lunch buffet.

A guy spots a nice looking girl in a bar goes up and starts small talk. Seeing that she didn't back off he asked her name.

"Carmen," she replied.

That's a nice name," he said warming up the conversation,
"Who named you, your mother?"

"No, I named myself, she answered.

"Oh, that's interesting. Why Carmen?"

"Because I like cars, and I like men," she said looking directly into his eyes. "So what's your name?" she asked.
